5 Favorite Plant-Based Meals (So Far)

Last week, I discussed six benefits of why you should go on a plant-based diet (or at least consider it). I’ve only been implementing plant-based meals into my diet for a couple of months, so I’m still transitioning from meat-based meals over to this diet, which is a lifestyle change.

1. Creamy Coconut Lentil Curry 

Totally healthy and totally vegan. Score! The creaminess and sweetness of the coconut oil and the kick from the ginger and garlic make this meal a certain crowd-pleaser. I never thought lentils and rice sounded so good until I had this. Thank you EndlessMeal.com!

2. Black Bean & Avocado 

Yum, yum, and even more yum. How can you go wrong with a combination of guacamole and shiitake mushrooms? Well, you can’t with this recipe by CocoonCooks.com. Throw in your own cheese substitute, and you have yourself a winner.

3. Vegan Eggplant Gyros

A little bit of spice and everything nice…these are the ingredients to make the perfect vegan gyro. With¬†cucumbers,¬†hummus, onions and more all wrapped up in pita flatbread (or naan bread), you’ll have a mouthgasm.
